REGULATION
International regulation: the use of oak alternatives is authorised (resolution OENO 9/2001 of the OIV)

European regulation: "the use of pieces of oak" is authorized since December 20, 2005 (Payment EC N° 2165/2005 = modification of the appendices N° 1493/1999). Each Member State must decide regarding possible applications within its country. Until such decisions are made by member states, the old regulation remains in force (ie wood alternatives are not authorised, but can be the subject of experiments under the control of a competent organization (DGCCRF for France)).

FRENCH OAK CHIPS

 

FRENCH OAK CHIPS

Nobile Fresh: supports wine structure, enhances fruit character and preserves phenolic compounds.
Nobile Spice: emphasizes the fruity and spicy characters and intensifies mouthfeel.
Nobile Sweet: increases the sensation of sweetness, and favours the emergence of grilled and toasty notes.
Nobile Intense: favours the appearance of roasted characters, and amplifies the mouthfeel.

 

AMERICAN OAK CHIPS

 

Nobile American Blend: increases the sensation of sweetness, confers vanilla and smoky notes.

 

 

APPLICATION IN WINEMAKING

White wines:
During fermentation: add 1 to 3 g/L of chips after clarification
Addition to wines: add 0.5 to 3 g/L by dipping Nobile® infusion bags directly into the tank.
Red wines :
During tank filling: add 1 to 5 g/L of chips in step
Addition to wines after racking: add 1 to 4 g/L by dipping Nobile® infusion bags directly into the tank

Nobile Fresh Granular: sensation of freshness, supports wine structure.
Nobile Sweet Granular: increases the sensation of sweetness, favours the emergence of grilled and woody notes.

Nobile American Fresh Granular : enhances fruit character
Nobile American Blend Granular: aincreases the sensation of sweetness, confers vanilla and smoky notes.

APPLICATION IN WINEMAKING


White wines:
During fermentation:: add 0.5 to 2 g/L of granular after clarification.
Red wines:
During tank filling: add 0.5 to 5 g/L of chips in step.
